Introduction: Bajra Churma is a traditional Rajasthani sweet made from pearl millet flour, ghee, and jaggery. It is often served with dal baati or enjoyed on its own.
Ingredients:
- 2 cups Bajra (pearl millet) flour
- 1/2 cup whole wheat flour
- 1 cup ghee
- 1 cup jaggery, grated
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/2 tsp cardamom powder
Instructions:
- Preparing the Dough:
- In a mixing bowl, combine bajra flour and whole wheat flour.
- Add 2 tablespoons of ghee and mix well.
- Gradually add water and knead into a stiff dough.
- Making the Churma:
- Divide the dough into small portions and shape them into thick discs or balls.
- Heat ghee in a pan and fry the discs or balls on low heat until they are golden brown and crispy.
- Remove from heat and let them cool.
- Grinding:
- Once cooled, break the fried discs or balls into small pieces.
- Grind them into a coarse powder using a food processor or mortar and pestle.
- Combining Ingredients:
- Heat the remaining ghee in a pan.
- Add the ground churma, grated jaggery, and cardamom powder. Mix well.
- Cook on low heat until the jaggery melts and combines with the churma.
- Final Touches:
- Add chopped nuts and mix well.
- Let it cool slightly before serving.
- Serving:
- Serve bajra churma as a dessert or with dal baati.
Tips:
- Adjust the sweetness by increasing or decreasing the amount of jaggery.
- Ensure the fried discs or balls are completely cooled before grinding to get a coarse texture.
