Ingredients

- 1 Green chili, slit
- 1/2 tsp Cumin seeds

- 1/2 tsp Garam masala powder
- Salt to taste
- 2 tbsp Ghee or Oil
- 4 cups Water or Vegetable broth
- Fresh coriander leaves for garnish
Instructions
Step 1: Cooking Bajra
- Soak bajra: Wash and soak bajra overnight or for at least 6-8 hours.
- Pressure cook: In a pressure cooker, cook soaked bajra with 2 cups of water until tender (about 4-5 whistles). Set aside.
Step 2: Making the Stew
- Heat ghee/oil: In a large pot or deep pan, heat ghee or oil over medium heat.
- Tempering: Add cumin seeds and let them splutter. Add minced garlic, grated ginger, and slit green chili. Sauté for a minute until aromatic.
- Add onions: Add finely chopped onions and sauté until they turn translucent.
- Add tomatoes and spices: Add chopped tomatoes, turmeric powder, coriander powder, red chili powder (if using), and salt. Cook until tomatoes are soft and oil starts to separate.
- Add vegetables: Add diced mixed vegetables and sauté for 3-4 minutes until they start to soften.
- Combine cooked bajra: Add the cooked bajra along with any remaining cooking water.
- Add water/broth: Pour in 4 cups of water or vegetable broth. Adjust consistency according to preference.
- Simmer: Bring the stew to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together and vegetables to cook through.
- Adjust seasoning: Taste and adjust salt and spices if needed.
Step 3: Serving
- Garnish: Garnish with fresh coriander leaves.
- Serve hot: Serve the Bajra and Vegetable Stew hot with crusty bread or steamed rice.
