Ingredients
To make Ragi Halwa, you will need:
- 1 cup Ragi (finger millet) flour
- 1/2 cup Jaggery (powdered or grated)

- 1/4 tsp Cardamom powder
- 2 cups Water
- A pinch of Salt
Instructions
Step 1: Roasting Ragi Flour
- Dry roast ragi flour: Heat a heavy-bottomed pan or kadhai over low-medium heat. Add ragi flour and dry roast it for 8-10 minutes until it turns aromatic and slightly changes color. Stir continuously to avoid burning. Remove from heat and set aside.
Step 2: Making Jaggery Syrup
- Prepare jaggery syrup: In a saucepan, add water and jaggery. Heat over medium heat until the jaggery melts completely and forms a syrup. Strain to remove impurities if necessary.
Step 3: Cooking Ragi Halwa
- Cooking ragi flour: Heat ghee in the same pan used for roasting ragi flour. Add chopped nuts and fry until they turn golden brown. Remove nuts and set aside.
- Add ragi flour: In the same pan with ghee, slowly add the roasted ragi flour while continuously stirring to avoid lumps.
- Cooking: Cook the ragi flour in ghee for 5-7 minutes until it starts to thicken.
- Add jaggery syrup: Gradually add the jaggery syrup to the ragi mixture, stirring continuously. Be careful as it may splutter.
- Simmer: Reduce heat to low and continue cooking the mixture until it thickens and starts leaving the sides of the pan.
- Add nuts and flavoring: Add cardamom powder, salt, and fried nuts. Mix well to combine.
Step 4: Serving
- Serve hot: Serve Ragi Halwa hot, garnished with additional nuts if desired.
