Ragi Stuffed Paratha is a wholesome and delicious flatbread made from finger millet flour, filled with a savory stuffing. It’s perfect for breakfast, lunch, or dinner, providing a good dose of calcium and fiber.
Ingredients:
- 1 cup ragi flour (finger millet flour)
- 1 cup whole wheat flour
- 1 cup boiled and mashed potatoes
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon chaat masala
- 2 tablespoons chopped coriander leaves
- Salt to taste
- Water as needed
- Ghee or oil for cooking
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine ragi flour, whole wheat flour, and a pinch of salt.
- Add water gradually and knead to form a soft dough.
- Cover and let it rest for 15-20 minutes.
2. Prepare the Stuffing:
- In another bowl, mix mashed potatoes, chopped onion, green chilies, cumin seeds, coriander powder, garam masala, chaat masala, chopped coriander leaves, and salt.
- Mix well to combine.
3. Roll Out the Parathas:
- Divide the dough into equal-sized balls.
- Roll out each ball into a small disc.
- Place a portion of the stuffing in the center of the disc.
- Fold the edges over the stuffing and pinch to seal.
- Gently roll out the stuffed dough ball into a paratha, being careful not to let the stuffing spill out.
4. Cook the Parathas:
- Heat a tawa or griddle over medium heat.
- Place the rolled paratha on the tawa and cook until bubbles appear on the surface.
- Flip the paratha and apply ghee or oil on the cooked side.
- Flip again and apply ghee or oil on the other side.
- Cook until both sides are golden brown and crisp.
5. Serve:
- Serve hot with yogurt, pickle, or any curry of your choice.
