Barnyard Millet Stuffed Parathas are a nutritious and flavorful twist on traditional stuffed parathas. These parathas are perfect for breakfast, lunch, or dinner, and they pack a punch of health benefits along with delicious taste. Let’s get started with this easy-to-follow recipe!
Ingredients:
For the Dough:
- 2 cups Whole Wheat Flour
- 1/2 cup Barnyard Millet Flour
- 1/2 tsp Salt
- 1 tbsp Oil
- Water as needed
For the Stuffing:
- 1 cup Barnyard Millet, cooked
- 1 medium Potato, boiled and mashed
- 1/2 cup Paneer, crumbled (optional)
- 1 small Onion, finely chopped
- 2-3 Green Chilies, finely chopped
- 1 tsp Ginger, grated
- 1/2 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chili Powder
- 1 tsp Garam Masala
- Salt to taste
- Fresh Coriander Leaves, finely chopped
- Oil or Ghee for cooking
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the whole wheat flour, barnyard millet flour, and salt. Add the oil and mix well.
- Gradually add water and knead into a soft, pliable dough. Cover and let it rest for 15-20 minutes.
- Cook the Barnyard Millet:
- Rinse the barnyard millet thoroughly under running water. In a saucepan, bring 2 cups of water to a boil and add the rinsed millet. Reduce the heat, cover, and let it simmer for about 10-12 minutes or until the millet is cooked and the water is absorbed. Let it cool.
- Prepare the Stuffing:
- In a mixing bowl, combine the cooked barnyard millet, mashed potato, crumbled paneer (if using), chopped onion, green chilies, grated ginger, cumin seeds, turmeric powder, red chili powder, garam masala, salt, and chopped coriander leaves. Mix well to form a cohesive stuffing mixture.
- Divide the Dough:
- Divide the dough into equal-sized balls (about the size of a golf ball). Flatten each ball slightly and make a small well in the center.
- Stuff the Parathas:
- Place a spoonful of the stuffing mixture in the center of the flattened dough. Bring the edges together to seal the stuffing inside, forming a ball again.
- Gently flatten the stuffed ball and roll it out into a round paratha, about 6-7 inches in diameter. Use dry flour to prevent sticking.
- Cook the Parathas:
- Heat a tawa or griddle over medium heat. Place the rolled-out paratha on the hot tawa.
- Cook for about 1-2 minutes on one side, until bubbles start to appear. Flip the paratha and apply a little oil or ghee on the cooked side.
- Flip again and apply oil or ghee on the other side. Cook until both sides are golden brown and crispy, flipping as needed.
- Serve Hot:
- Serve the barnyard millet stuffed parathas hot with a dollop of butter, yogurt, pickle, or any chutney of your choice.
Tips and Variations:
- Vegan Option: Skip the paneer or use a plant-based alternative for a vegan version.
- Extra Flavors: Add grated carrots, finely chopped spinach, or other vegetables to the stuffing for added nutrition and flavor.
- Spice Level: Adjust the green chilies and red chili powder according to your spice preference.
- Serving Suggestions: These parathas pair wonderfully with raita, chutney, or a side of vegetable curry.
