Ingredients
For the Batter:
- 1 cup proso millet (bajra), soaked in water for 2-3 hours
- 1/2 cup plain yogurt
- 1/2 cup water (adjust as needed)
- 1 teaspoon baking soda
- 1 teaspoon sugar
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon ground cumin
- Salt to taste
For the Vegetable Mixture:
- 1 cup mixed vegetables, finely chopped (carrots, bell peppers, peas, beans, etc.)
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped (optional, for extra heat)
- 2 tablespoons oil (for tempering)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1/4 cup fresh coriander leaves, chopped
For Garnishing (Optional):
- A handful of sesame seeds
- Fresh coriander leaves
Instructions
- Preparing the Batter:
- Drain the soaked proso millet and blend it with yogurt and water to make a smooth batter. You may need to adjust the amount of water to achieve a thick but pourable consistency.
- Transfer the batter to a large bowl. Add baking soda, sugar, turmeric powder, red chili powder, ground cumin, and salt. Mix well and set aside.
- Preparing the Vegetable Mixture:
- Heat 2 tablespoons of oil in a skillet over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, asafoetida, and chopped onions. Sauté until the onions are translucent.
- Add the finely chopped mixed vegetables and green chilies (if using). Cook for 5-7 minutes until the vegetables are tender. Season with salt.
- Stir in the fresh coriander leaves and remove from heat.
- Combining Ingredients:
- Gently fold the cooked vegetable mixture into the prepared batter.
- Cooking the Handvo:
- Preheat your oven to 180°C (350°F) or prepare a steaming setup.
- If using an oven, grease a baking dish or cake tin. Pour the batter into the prepared dish and smooth the top with a spatula. Optionally, sprinkle sesame seeds on top for added crunch.
- Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Grease a steaming pan or thali. Pour the batter into the prepared pan.
- Steam for 20-25 minutes, or until a toothpick inserted into the center comes out clean. You can use a traditional steamer or an improvised steaming setup using a large pot with a rack.
- Serving:
- Allow the Handvo to cool for a few minutes before slicing into pieces.
- Serve warm with green chutney or yogurt on the side.
Tips
- Vegetable Choices: Feel free to use any combination of vegetables you like. Just make sure they are finely chopped for even cooking.
- Texture: The batter should be thick but not too stiff. Adjust the water content if needed.
- Garnishes: Sesame seeds add a nice crunch and nutty flavor. Fresh coriander leaves can be used as an additional garnish.
- Storage: Store leftover Handvo in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on a skillet before serving.
