Welcome to my kitchen! Today, I’m excited to share a recipe for Barnyard Millet Dinner Rolls. These rolls are soft, fluffy, and have a delightful nutty flavor thanks to the barnyard millet. They’re perfect for any meal, whether it’s a special occasion or a simple family dinner. Let’s get baking!
Ingredients:
For the Rolls:
- 1 cup barnyard millet flour
- 2 cups all-purpose flour (or whole wheat flour for a healthier option)
- 1/4 cup sugar (or honey/maple syrup)
- 2 teaspoons active dry yeast
- 1 1/2 teaspoons salt
- 1 cup warm milk (110°F or 45°C)
- 1/4 cup butter (or olive oil), melted
- 1 large egg
- 1 tablespoon sesame seeds or poppy seeds (optional, for topping)
For the Glaze (Optional):
- 2 tablespoons melted butter
- 1 tablespoon honey or maple syrup
Instructions:
1. Prepare the Yeast:
In a small bowl, dissolve the active dry yeast in warm milk. Add a pinch of sugar or honey to help activate the yeast. Let it sit for 5-10 minutes until it becomes frothy and bubbly.
2. Mix Dry Ingredients:
In a large mixing bowl, combine the barnyard millet flour, all-purpose flour, and salt. Whisk them together to ensure they are well mixed.
3. Combine Wet Ingredients:
In another bowl, whisk together the melted butter and egg. Add this mixture to the yeast mixture once it’s frothy.
4. Make the Dough:
Pour the wet ingredients into the dry ingredients. Stir with a wooden spoon or spatula until a dough begins to form. The dough should be soft and slightly sticky. If it’s too sticky, add a little more all-purpose flour, one tablespoon at a time.
5. Knead the Dough:
Turn the dough out onto a lightly floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook attachment to knead the dough.
6. First Rise:
Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm, draft-free area for about 1-1.5 hours, or until it has doubled in size.
7. Shape the Rolls:
Once the dough has risen, punch it down to release the air. Turn it out onto a lightly floured surface and divide it into 12-15 equal pieces. Shape each piece into a ball and place them in a greased 9×13-inch baking dish or on a parchment-lined baking sheet.
8. Second Rise:
Cover the rolls with a damp cloth or plastic wrap and let them rise again for about 30-45 minutes, or until they have puffed up and are touching each other.
9. Preheat the Oven:
While the rolls are rising, preheat your oven to 375°F (190°C).
10. Add Topping (Optional):
If desired, brush the tops of the rolls with a little water or milk and sprinkle sesame seeds or poppy seeds on top for added texture and flavor.
11. Bake the Rolls:
Bake the rolls in the preheated oven for 15-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
12. Glaze (Optional):
While the rolls are baking, prepare the glaze by melting butter and mixing it with honey or maple syrup. Brush this mixture over the rolls immediately after they come out of the oven for a shiny, sweet finish.
13. Cool and Serve:
Allow the rolls to cool slightly before serving. They’re perfect warm from the oven, but also delicious at room temperature.
Tips:
- Storage: Store the rolls in an airtight container at room temperature for up to 2 days. You can also freeze them for up to 3 months. To reheat, simply warm them in the oven.
- Flavor Variations: Feel free to add herbs, cheese, or garlic to the dough for extra flavor.
- Kneading: If you prefer, you can use a stand mixer with a dough hook to knead the dough, which can save time and effort.
I hope you enjoy making and eating these Barnyard Millet Dinner Rolls as much as I do! They’re a delicious and nutritious addition to any meal. Let me know how they turn out for you in the comments below! Happy baking!
