- 2 cups water

- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 2 tablespoons raisins

Instructions:
1. Prepare the Barnyard Millet:
Rinse the barnyard millet thoroughly under running water. Soak it in water for about 30 minutes. Drain the water before cooking.
2. Cook the Millet:
In a saucepan, bring 2 cups of water to a boil. Add the soaked and drained barnyard millet. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the millet is cooked and the water is absorbed. Stir occasionally to prevent sticking.
3. Add Milk:
Once the millet is cooked, add the milk to the saucepan. Bring the mixture to a gentle boil over medium heat, stirring occasionally. Reduce the heat to low and let it simmer for another 10 minutes until the mixture thickens.
4. Sweeten and Flavor:
Add the sugar and ground cardamom to the simmering mixture. Stir well to combine. If using, soak the saffron strands in a little warm milk and add them to the halwa. Continue to cook for another 5 minutes, allowing the flavors to meld together.
5. Add Ghee and Nuts:
In a small pan, heat the ghee. Add the chopped nuts and raisins, and sauté until they are golden and fragrant. Stir the toasted nuts and raisins into the halwa. Add the grated coconut if using.
6. Cook the Halwa:
Continue to cook the halwa on low heat, stirring constantly until it thickens and starts to leave the sides of the pan. This should take about 10-15 minutes.
7. Serve:
Once the halwa reaches the desired consistency, remove it from the heat. Transfer it to a serving dish and garnish with additional chopped nuts and saffron strands if desired.
