Hello, food lovers! Today, we’re making a delicious and healthy snack or side dish: Millet and Broccoli Fritters. These crispy fritters are packed with nutrient-dense millet and fresh broccoli, offering a flavorful way to enjoy your veggies. Perfect for a light meal, appetizer, or even as a lunchbox treat!
Why Millet?
For this recipe, we’re using foxtail millet. Foxtail millet has a delicate, slightly nutty flavor and a tender texture that complements the crunchy broccoli. It’s a great source of protein, fiber, and essential minerals, making these fritters both nutritious and satisfying.
Ingredients:
- 1 cup foxtail millet: Rinsed and drained.
- 2 cups water: For cooking the millet.
- 2 cups broccoli florets: Finely chopped.
- 1 small onion, finely chopped: Adds sweetness and depth.
- 2 cloves garlic, minced: For flavor.
- 2 large eggs: Acts as a binder.
- 1/2 cup grated Parmesan cheese: For a touch of richness.
- 1/4 cup whole wheat flour or chickpea flour: Helps bind the fritters.
- 1/4 cup fresh parsley or cilantro, chopped: Adds freshness.
- 1 teaspoon dried oregano or thyme: For extra flavor.
- Salt and pepper to taste: Essential seasonings.
- 2 tablespoons olive oil or coconut oil: For frying.
Instructions:
- Cook the Foxtail Millet:
- In a medium saucepan, bring 2 cups of water to a boil.
- Add the rinsed foxtail millet, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the millet is tender and the water is absorbed.
- Fluff with a fork and let it cool slightly.
- Prepare the Broccoli:
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and cook for 5-7 minutes until softened.
- Stir in the minced garlic and cook for another 1-2 minutes.
- Add the chopped broccoli and cook until tender but still bright green, about 5 minutes. Remove from heat and let it cool slightly.
- Make the Fritter Mixture:
- In a large bowl, combine the cooked foxtail millet, broccoli mixture, eggs, grated Parmesan cheese, flour, chopped parsley or cilantro, and dried oregano or thyme. Mix until well combined.
- Season with salt and pepper to taste.
- Form and Cook the Fritters:
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Scoop heaping tablespoons of the mixture and form into patties, pressing down slightly.
- Cook the fritters in the skillet for 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the skillet; cook in batches if necessary.
- Serve:
- Transfer the fritters to a paper towel-lined plate to drain any excess oil.
- Serve warm with your favorite dipping sauce or a dollop of Greek yogurt.
