Ingredients
- 1/2 cup popcorn kernels
- 1/4 cup sorghum millet
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Pop the Corn and Sorghum Millet
- In a large pot with a lid, heat 2 tablespoons of oil over medium-high heat.
- Add the popcorn kernels, cover the pot, and shake occasionally until the popping slows down.
- Remove from heat and transfer the popped popcorn to a large mixing bowl.
- In the same pot, add the sorghum millet and cover with a lid.
- Shake the pot gently until the sorghum starts popping (similar to popcorn), then transfer the popped sorghum to the mixing bowl with the popcorn.
Step 2: Prepare the Caramel
- In a medium saucepan, combine granulated sugar, unsalted butter, light corn syrup, and salt.
- Cook over medium heat, stirring constantly until the mixture comes to a boil.
- Once boiling, stop stirring and let it cook for 4-5 minutes until it reaches a light golden color.
- Remove from heat and quickly stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.
Step 3: Coat the Popcorn and Millet
- Immediately pour the hot caramel over the popcorn and popped sorghum millet.
- Using a spatula, gently toss to coat the popcorn and millet evenly with the caramel.
Step 4: Bake the Caramel Popcorn
- Preheat your oven to 250°F (120°C).
- Spread the caramel-coated popcorn and millet on a baking sheet lined with parchment paper or a silicone baking mat.
- Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating.
Step 5: Cool and Break
- Remove the caramel popcorn from the oven and let it cool completely.
- Once cooled, break it into clusters or individual pieces.
