- 1 cup fresh lemon juice (about 4-5 lemons)
- 1 tablespoon lemon zest (from about 2 lemons)
- 1/2 cup unsalted butter, melted and slightly cooled
For Garnish (Optional):
- Powdered sugar
- Lemon zest
- Fresh berries or mint leaves
Instructions
Step 1: Prepare the Millet Crust
- In a medium bowl, combine millet flour, all-purpose flour, granulated sugar, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the egg yolk and gradually add ice water, 1 tablespoon at a time, until the dough comes together.
- Gather the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Preheat and Roll Out the Dough
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan with a removable bottom.
- Transfer the dough to the tart pan, gently pressing it into the edges and trimming any excess.
Step 3: Blind Bake the Crust
- Line the tart crust with parchment paper and fill with pie weights or dried beans.
- Bake in the preheated oven for 10 minutes.
- Remove the parchment paper and weights, and bake for an additional 5-7 minutes, or until the crust is lightly golden. Set aside to cool.
Step 4: Prepare the Lemon Filling
- In a medium bowl, whisk together granulated sugar, all-purpose flour, and salt.
- Add the eggs one at a time, beating well after each addition.
- Stir in the fresh lemon juice, lemon zest, and melted butter until smooth and well combined.
Step 5: Fill and Bake the Tart
- Pour the lemon filling into the pre-baked tart crust.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and the edges are lightly golden. The center may still have a slight jiggle.
Step 6: Cool and Garnish
- Allow the tart to cool completely in the pan on a wire rack.
- Once cooled, remove the tart from the pan and transfer to a serving platter.
- Garnish with powdered sugar, additional lemon zest, and fresh berries or mint leaves if desired.
