Ingredients
For the Brownies:

- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons instant coffee or espresso powder
- 1/2 cup semi-sweet chocolate chips (optional)
For the Mocha Swirl (Optional):
- 1/4 cup heavy cream (or coconut cream for a dairy-free option)
- 2 tablespoons instant coffee or espresso powder
- 2 tablespoons granulated sugar
- 1/4 cup semi-sweet chocolate chips
Instructions
Step 1: Prepare the Millet
- Rinse the foxtail millet under cold water.
- In a small saucepan, combine the rinsed millet with 1 cup of water.
- Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the millet is tender and water is absorbed.
- Remove from heat and let it cool.
Step 2: Preheat and Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Grease and line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Step 3: Make the Brownie Batter
- In a medium saucepan, melt the unsalted butter over low heat.
- Remove from heat and stir in the granulated sugar, mixing until smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Sift in the unsweetened cocoa powder and mix until combined.
- Stir in the flour, salt, and baking powder.
- Add the cooked millet and instant coffee or espresso powder, mixing until just combined.
- Fold in the semi-sweet chocolate chips if using.
Step 4: Bake the Brownies
- Pour the brownie batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Step 5: Prepare the Mocha Swirl (Optional)
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Remove from heat and stir in the instant coffee or espresso powder and granulated sugar until dissolved.
- Stir in the semi-sweet chocolate chips until melted and smooth.
- Drizzle the mocha mixture over the top of the baked brownies while they are still warm, and use a knife to swirl it gently into the brownies.
Step 6: Cool and Serve
- Allow the brownies to cool completely in the pan on a wire rack.
- Once cooled, lift the brownies out of the pan using the parchment paper overhang and cut into squares.
