Ingredients:
- 2 cups Bajra (pearl millet) flour
- 1 cup fresh spinach leaves, finely chopped
- 1/2 tsp cumin seeds
- 1/2 tsp carom seeds (ajwain)
- 1 green chili, finely chopped
- 1 tsp ginger paste
- Salt to taste
- Water (as needed)
- Ghee or oil (for cooking)
Instructions:
- Preparing the Dough:
- In a mixing bowl, combine bajra flour, chopped spinach, cumin seeds, carom seeds, green chili, ginger paste, and salt.
- Gradually add water and knead into a soft dough. The dough should be pliable but not sticky.
- Shaping the Rotis:
- Divide the dough into equal-sized balls.
- Dust a rolling surface with a little flour.
- Flatten a dough ball and roll it out into a circular shape using a rolling pin. Since bajra flour lacks gluten, the edges might crack slightly; just press them together gently.
- Cooking the Rotis:
- Heat a tava or griddle over medium-high heat.
- Place the rolled-out roti on the hot griddle.
- Cook for a minute or until small bubbles form on the surface. Flip the roti.
- Cook the other side until brown spots appear.
- Apply a little ghee or oil on both sides and cook until the roti is golden brown and cooked through.
- Serving:
- Serve hot bajra and spinach rotis with yogurt, pickle, or any curry.
Tips:
- You can add finely chopped onions or grated carrots to the dough for added flavor and nutrition.
- If the dough feels too dry, sprinkle a little water and knead again.
