Ingredients:
- 1 cup Bajra (pearl millet), soaked overnight
- 1 tbsp tamarind pulp
- 2 tbsp jaggery, grated

- 1 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Preparation:
- Drain the soaked bajra.
- Cooking the Bajra:
- In a large pot, bring water to a boil.
- Add the drained bajra and cook until it becomes tender. This may take about 30-40 minutes.
- Drain and set aside.
- Making the Sabzi:
- Heat oil in a pan.
- Add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
- Add turmeric powder and red chili powder. Sauté for a few seconds.
- Add the cooked bajra to the pan and mix well.
- Add tamarind pulp, jaggery, and salt. Mix everything together.
- Simmering:
- Let the sabzi simmer on low heat for about 10-15 minutes, allowing the flavors to blend.
- Stir occasionally to prevent sticking.
- Serving:
- Garnish with fresh coriander leaves.
- Serve hot with roti, paratha, or rice.
