Ingredients:
- 1 cup Bajra (pearl millet), soaked overnight
- 1/2 cup mixed lentils (moong dal, masoor dal, toor dal), soaked for 30 minutes
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chili, chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp ghee or oil
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- Preparation:
- Drain the soaked bajra and lentils.
- Cooking the Khichda:
- Heat ghee or oil in a pressure cooker.
- Add cumin seeds and let them splutter.
- Add chopped onions and green chili. Sauté until onions turn golden brown.
- Add ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add the soaked bajra and lentils. Mix everything together.
- Add 4-5 cups of water and stir well.
- Pressure Cooking:
- Close the lid of the pressure cooker and cook on high heat for 2 whistles.
- Reduce the heat and cook for another 15-20 minutes on low heat.
- Turn off the heat and let the pressure release naturally.
- Final Touches:
- Open the cooker and stir the khichda. Adjust the consistency with more water if needed.
- Add garam masala and mix well.
- Serving:
- Garnish with fresh coriander leaves.
- Serve hot with lemon wedges and enjoy this hearty meal.
