Ingredients:
- 1/2 cup Bajra (pearl millet) flour
- 2 cups water
- 1 cup buttermilk
- 1 tbsp ghee
- 1/2 tsp cumin seeds
- Salt to taste
- Black pepper powder (optional)
Instructions:
- Roasting the Flour:
- Heat ghee in a pan.
- Add bajra flour and roast it on low flame until it turns golden brown and aromatic. This may take about 5-7 minutes.
- Cooking the Raab:
- Add water to the roasted flour, stirring continuously to avoid lumps.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally.
- Adding Buttermilk:
- Add buttermilk to the mixture and stir well.
- Cook for another 5 minutes, allowing the flavors to blend.
- Seasoning:
- In a small pan, heat a little ghee and add cumin seeds. Let them splutter.
- Add this tempering to the raab and mix well.
- Add salt to taste and black pepper powder if using.
- Serving:
- Serve the bajra raab hot, especially during cold weather.

- Adjust the consistency by adding more water or buttermilk as needed.
