Ingredients

Main Ingredients:
- 1 cup millet (foxtail or pearl millet)
- 2 tablespoons ghee or vegetable oil
- 1 large onion, finely chopped
- 1 medium carrot, diced
- 1/2 cup green peas (fresh or frozen)
- 1 medium potato, diced
- 1 small tomato, chopped
- 2-3 green chilies, slit
- 1 tablespoon ginger, grated
- 4 cups water
Spices:
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 bay leaf
- 2-3 cloves
- 1 cinnamon stick
- Salt to taste
For Garnish:
- Fresh coriander leaves, chopped
- Grated coconut (optional)
- Lemon wedges
Instructions
Step 1: Prepare the Millet
- Rinse the millet under running water until the water runs clear. Soak the millet in water for about 30 minutes. This helps in reducing the cooking time and ensures even cooking.
Step 2: Cook the Vegetables
- Heat the ghee or vegetable oil in a large pan over medium heat.
- Add mustard seeds and cumin seeds. Sauté until they start to splutter.
- Add the bay leaf, cloves, and cinnamon stick. Sauté until the spices release their aroma.
- Add the chopped onions and sauté until they turn golden brown.
- Add the grated ginger and green chilies. Sauté for another minute until the raw smell disappears.
