Ingredients:
- 1 cup proso millet
- 1 cup jaggery or brown sugar (grated or powdered)
- 1/4 cup ghee (clarified butter)
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 cup grated coconut (fresh or desiccated)
- 1 teaspoon ground cardamom
- 2 tablespoons raisins
- 2 tablespoons water
Instructions:
1. Roast the Proso Millet:
In a dry pan, roast the proso millet over medium heat until it becomes fragrant and turns light golden brown. Stir continuously to avoid burning. Once roasted, let it cool slightly and then grind it into a fine powder using a blender or spice grinder.
2. Prepare the Jaggery Syrup:
In a saucepan, combine the jaggery and water. Heat over medium heat until the jaggery dissolves completely. Continue to cook until the syrup thickens slightly (a soft-ball stage). Remove from heat and set aside.
3. Roast the Nuts and Coconut:
In another pan, heat a tablespoon of ghee. Add the chopped nuts and roast until golden brown. Add the grated coconut and roast for another 2-3 minutes until it turns light golden. Remove from heat and set aside.
4. Combine the Ingredients:
In a large mixing bowl, combine the ground proso millet, roasted nuts, coconut, raisins, and ground cardamom. Pour the jaggery syrup over the mixture and add the remaining ghee. Mix everything well until all the ingredients are evenly coated with the syrup and ghee.
5. Shape the Ladoos:
While the mixture is still warm, take small portions and shape them into round balls using your hands. If the mixture is too dry to hold together, add a little more warm ghee or water to bind it.
6. Cool and Serve:
Place the ladoos on a plate and let them cool completely. Once cooled, they will firm up and be ready to enjoy.
7. Store:
Store the Proso Millet Sweet Balls in an airtight container. They will stay fresh for up to a week at room temperature or longer if refrigerated.
Tips:
- Binding: If the mixture feels too dry while shaping the ladoos, you can add a little warm ghee or water to help bind them.
- Sweetness: Adjust the sweetness to your taste by adding more or less jaggery or sugar.
