Introduction: Bajre ki Khichdi is a hearty and nutritious one-pot meal made with bajra (pearl millet) and moong dal. This Rajasthani dish is perfect for a cozy dinner and is known for its simplicity and health benefits.
Ingredients:
- 1 cup Bajra (pearl millet), soaked for 4-6 hours
- 1/2 cup Yellow moong dal, soaked for 30 minutes
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp ghee
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Preparation:
- Drain the soaked bajra and moong dal.
- Cooking the Khichdi:
- Heat ghee in a pressure cooker.
- Add cumin seeds and let them splutter.
- Add chopped onions and green chili. Sauté until onions turn golden brown.
- Add chopped tomatoes and cook until they become soft.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add the soaked bajra and moong dal. Mix everything together.
- Add 4-5 cups of water and stir well.
- Pressure Cooking:
- Close the lid of the pressure cooker and cook on high heat for 2 whistles.
- Reduce the heat and cook for another 15-20 minutes on low heat.
- Turn off the heat and let the pressure release naturally.
- Serving:
- Open the cooker and stir the khichdi. It should have a porridge-like consistency.
- Garnish with fresh coriander leaves.
- Serve hot with a dollop of ghee, yogurt, or pickles.
Tips:
- Adjust the water quantity to achieve your desired consistency.
- You can add vegetables like carrots, peas, and potatoes to make the khichdi more nutritious.
