Introduction: Bajra Dhokla is a nutritious and delicious variation of the traditional Gujarati dhokla. Made with pearl millet flour, this steamed snack is perfect for breakfast or as a light snack.
Ingredients:
- 1 cup Bajra (pearl millet) flour
- 1/2 cup yogurt
- 1/2 cup water (or as needed)
- 1 tsp ginger-green chili paste
- 1 tsp Eno fruit salt
- Salt to taste
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- A pinch of asafoetida (hing)
- Fresh coriander leaves, chopped (for garnish)
- Grated coconut (for garnish, optional)
Instructions:
- Preparing the Batter:
- In a mixing bowl, combine bajra flour, yogurt, and water. Mix well to form a smooth batter.
- Add ginger-green chili paste and salt. Mix well.
- Let the batter rest for about 30 minutes.
- Steaming the Dhokla:
- Grease a dhokla plate or a flat-bottomed dish with a little oil.
- Just before steaming, add Eno fruit salt to the batter and mix gently. The batter will become frothy.
- Pour the batter into the greased plate and spread it evenly.
- Steam the batter in a steamer or a large pot for about 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Tempering:
- In a small pan, heat oil.
- Add mustard seeds and let them splutter.
- Add sesame seeds and a pinch of asafoetida. Sauté for a few seconds.
- Pour this tempering over the steamed dhokla.
- Serving:
- Cut the dhokla into squares or diamonds.
- Garnish with chopped coriander leaves and grated coconut if using.
- Serve warm with green chutney or sweet tamarind chutney.
Tips:
- Ensure the steamer is preheated before placing the dhokla batter in it.
- Do not overmix the batter after adding Eno to retain its fluffiness.
