Ingredients:
- 2 cups Bajra (pearl millet) flour
- 1 cup jaggery, grated
- 1/2 cup ghee
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 cup grated coconut (optional)
- 1 tsp cardamom powder
- A pinch of salt
Instructions:
- Roasting the Flour:
- Heat a heavy-bottomed pan and add the bajra flour.
- Dry roast the flour on low to medium heat until it turns aromatic and slightly changes color. This should take about 10-15 minutes. Stir continuously to avoid burning.
- Remove from heat and let it cool.
- Preparing the Jaggery Syrup:
- In a separate pan, melt the ghee.
- Add the grated jaggery to the melted ghee and stir continuously until the jaggery dissolves completely.
- Once the jaggery is melted, add cardamom powder and a pinch of salt. Mix well.
- Combining Ingredients:
- Add the roasted bajra flour to the jaggery syrup. Mix well until the flour is fully coated with the syrup.
- Add the chopped nuts and grated coconut (if using) to the mixture. Stir well to combine.
- Shaping the Laddus:
- Let the mixture cool slightly until it is comfortable to handle.
- Grease your palms with a little ghee and shape the mixture into small laddus.
- Serving:
- Allow the laddus to cool completely and set before serving.
- Store in an airtight container.
Tips:
- Ensure the jaggery is fully dissolved and the syrup is smooth to avoid grainy laddus.
- You can add a few raisins or dried fruits for added texture and flavor.
