Introduction: Bajra and Onion Pulao is a delicious and healthy alternative to traditional rice pulao. Made with pearl millet and caramelized onions, this dish is flavorful and packed with nutrients.
Ingredients:
- 1 cup Bajra (pearl millet), soaked overnight
- 2 onions, thinly sliced
- 1 bay leaf
- 2-3 cloves
- 1-inch cinnamon stick
- 2 green cardamom pods
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- 3 cups water
- 2 tbsp oil or ghee
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Preparation:
- Drain the soaked bajra.
- Cooking the Pulao:
- Heat oil or ghee in a large pan.
- Add cumin seeds, bay leaf, cloves, cinnamon stick, and green cardamom pods. Sauté for a few seconds until fragrant.
- Add sliced onions and green chilies. Sauté until the onions are caramelized and golden brown.
- Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add turmeric powder and mix well.
- Adding Bajra:
- Add the drained bajra to the pan and mix well with the onion mixture.
- Add 3 cups of water and salt to taste. Stir well.
- Bring to a boil, then reduce the heat to low, cover, and cook until the bajra is tender and the water is absorbed, about 25-30 minutes.
- Final Touches:
- Once cooked, fluff the pulao with a fork and sprinkle garam masala.
- Garnish with fresh coriander leaves.
- Serving:
- Serve hot with raita or a side salad.
