Ingredients:
- 1 cup Bajra (pearl millet), soaked for 4-6 hours and cooked
- 2 potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- Fresh coriander leaves, chopped
- Oil (for shallow frying)
Instructions:
- Preparing the Mixture:
- In a mixing bowl, combine cooked bajra, mashed potatoes, chopped onions, green chilies, ginger paste, and garlic paste.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
- Add fresh coriander leaves and mix again until all ingredients are well incorporated.
- Shaping the Tikkis:
- Divide the mixture into equal-sized portions.
- Shape each portion into a round, flat patty.
- Cooking the Tikkis:
- Heat oil in a pan over medium heat.
- Place the tikkis in the pan and shallow fry until they are golden brown and crispy on both sides.
- Remove the tikkis from the pan and drain on paper towels.
- Serving:
- Serve hot bajra tikkis with green chutney, tamarind chutney, or yogurt.
Tips:
- Ensure the mixture is well bound. If it feels too loose, add a little besan (gram flour) to help bind it.
