Instructions
- Rinse the little millet thoroughly and soak in water for 2-3 hours.
- Drain and grind the soaked millet into a smooth batter using yogurt and a little water.
- Transfer the batter to a mixing bowl. Add ginger paste, chopped green chilies, turmeric powder, and salt. Mix well.
- Just before steaming, add baking soda to the batter and mix gently.
- Pour the batter into a greased dhokla plate or a shallow dish suitable for steaming.
- Steam the batter in a steamer or pressure cooker (without the whistle) for 15-20 minutes or until a toothpick inserted comes out clean.
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add asafoetida and curry leaves, and sauté for a few seconds.
- Pour this tempering over the steamed dhokla.
- Garnish with fresh coriander leaves and cut into squares.
- Serve warm with green chutney.
