Ingredients

- 1/2 cup millet

- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/4 teaspoon ground cinnamon
Instructions
Step 1: Prepare the Millet
- Rinse the millet under cold water.
- In a small saucepan, combine the rinsed millet with 1 cup of water.
- Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the millet is tender and the water is absorbed.
- Remove from heat and let it cool.
Step 2: Preheat and Prepare the Muffin Pan
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin pan with paper liners or lightly grease the cups.

- If using, sprinkle the streusel topping evenly over the batter.

- The tops should be golden brown and slightly domed.
Step 7: Cool and Serve
- Allow the muffins to cool in the pan for about 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
